Local cake maker Helen Bollen, owner of Mrs B’s Cakes, was named Best Themed Cupcake maker at the National Cupcake Championships at the Birmingham NEC, which was judged by royal wedding cake designer Fiona Cairns and the award presented by top baker Mary Berry.
Her Summer Sundae was created to offer the taste of a glorious summery ice-cream dessert, wrapped up in a cake. The biscuit base case held a rich dark chocolate sponge, layered with chocolate ganache, raspberry jam and vanilla buttercream, topped with raspberry sauce, pistachios, grated chocolate, grated dark chocolate and a cherry.
Helen says: “I was lucky enough to get through to the finals in last year’s competition as well but I still can’t believe I won my category this year!”
